Gluten Free Jewish Apple Cake

Please do not substitute any items unless due to dietary restrictions or preferences – ie vegan, vegetarian. I will let you know if you can substitute an item

Always preheat your oven before you start making your batter

And please, please, please read the ingredients and instructions before starting

Serves 12-16

Equipment needed : Bundt Pan, three mixing bowls

Prep Time 30 minutes

Bake Time 40-45 minutes

Ingredients

2-3 apples, approximately 3 cups (your preference but I always use one granny smith)

3 Tbsp honey (may substitute sugar)

1 tsp cinnamon

1 1/2 cups GF flour

2 tsp baking powder

1/2 tsp salt

1 1/3 cup granulated sugar

2/3 cup neutral oil (canola, vegetable or similar – NO olive oil)

3 Tbsp orange juice

1 1/2 tsp vanilla

4 eggs

cooking spray or butter for greasing pan

extra flour 2-4 Tbsp

Instructions

  1. Preheat oven to 350 degrees Fahrenheit, convection if possible.
  2. Peel, core and coarse dice apples into approximately 1/2 inch pieces and place in a mixing bowl.
  3. Add honey and cinnamon to the apples and mix until honey and cinnamon are covering all the apples.
  4. In a second bowl, add flour, baking powder and salt and mix until combined.
  5. In a third mixing bowl, add sugar, oil, juice, vanilla and eggs. Beat all these ingredients until well combined, making sure that eggs are well incorporated.
  6. Using a slotted spoon, take out the apples and put in with the flour mixture. Mix the apples in the flour mixture until all apples are covered in flour. DO NOT get rid of the liquid in the bottom of the bowl the apples were in.
  7. Take the liquid at the bottom of the bowl that had the apples and add that to the bowl that has the eggs and mix.
  8. Add the bowl with the liquid ingredients, into the bowl with the flour and apples. Mix this very well.
  9. After you do this, spray with cooking spray or grease with butter a bundt pan. Then coat the pan in flour. Make sure the pan is well greased and coated. This will enable you to get the cake out without difficulty.
  10. Add the batter to the bundt pan making sure that it is in one level layer.
  11. Put in the oven for 40-45 minutes. Approximately halfway through the baking time, quickly turn the bundt pan 180 degrees around in the oven to ensure even cooking.
  12. At the 40 minute mark, use either a long toothpick, skewer or butter knife and test the cake to make sure that it is fully cooked. The toothpick or other item should come out clean.
  13. After removing from the oven allow to sit in the bundt pan for 10 minutes.
  14. After the 10 minute mark turn out onto a wire cooling rack and tap or gently shake to get it out.
  15. Once out allow to cool to room temperature before moving to a cake plate.
